Ingredients: 3 large zucchini 1 1/2 Tbl. Tuscan Herb olive oil 3 Tbl/ freshly grated Parmesan cheeseDirections: Preheat broiler. Parboil zucchini until crisp-tender, about 4 minutes. Transfer to baking sheet and halve lengthwise.  Dot with oil and sprinkle cheese, salt and pepper.  Place under broiler until lightly golden and bubbly.
