Ingredients
- 1 cup Orzo pasta
- 1/4 cup Red onion, finely chopped
- 1/2 cup Cherry tomatoes, halved
- 1/2 cup Kalamata olives, sliced
- 1/2 cup Crumbled feta cheese
- 1/4 cup Fresh Parsley, chopped
For the dressing:
- 1/4 cup Frantoio Leccino Extra virgin olive oil
- 2 tbsp Red wine vinegar
- 1 clove Garlic, minced
- 1 tsp Dried Oregano
- 1/2 tbsp Salt and pepper to taste
Instructions
- Cook Orzo: Cook the orzo pasta according to package instructions. Drain and rinse with cold water to cool it down.
- Prepare Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper until well combined.
